Tatsu Ramen House opened in Elgin in 2021 — a small, family-owned room rooted in tradition and inspired by Japan's culinary heritage. Chef Erdene built the menu around one stubborn idea: real broth takes real time.
We start the bones the day before and let them go around the clock. Twenty-four hours later, when the collagen has surrendered and the broth is the colour of cream, the kitchen opens the doors. Everything else — the noodles, the tare, the chashu — is built around that one act of patience.
